Adding catagories

I am trying to add a new category to my forum, In the option/structure I have create new sub-forum, manage pinned topics, manage sub-forums and change parent.

You have sub-categories in Blogs... and sub-forums in Forums...
Forums also have Topics... I'm not sure of the difference between a Sub-forum and a Topic...

I've also seen sub-categories on boards that have been defined as 'Mixed'... so I'm not sure now...
